Sisters and seasoned restaurateurs
So Sung and
So Young Kim formed their business partnership in October 2006, soon
afterward acquiring an established, 60-seat sushi bar located at Holcomb
Place in Roswell. The sisters immediately set about re-branding the
franchise as
JP Sushi- meanwhile upgrading the
restaurant’s operation, interior and presentation.
They brought in the classically-trained and accredited
Chef Dong Chul Kim (pictured above with So Sung and So Young),
to re-tool the menu and to re-train the kitchen staff.
“We were attracted by the open-kitchen format- which is in the traditional
Japanese style, and also by the restaurant’s solid base of long-time
regulars,” says So Young. “We have designed our restaurant to offer the best
value possible without compromising the price point those regulars have
become used to. Basically, it comes down to being absolutely efficient and
consistent.”
The Kim Sisters have also improved the wine list to include a nice
selection of boutique offerings together with some better-known vintners,
and have added a complete line of premium sakes as well as the full
complement of Japanese and domestic beers. Because the Sisters didn’t want
to interrupt the restaurant’s service during a comprehensive renovation,
their upgrades and improvements have happened over time, during off-hours.
“We’re still a work in progress,” says So Sung. “We want people to have to
come back again and again if they want to keep up with what’s new at JP
Sushi!”
